Aimee Novak, Executive Director of The Eatery dining hall on the Yavapai College Prescott campus, has been appointed as the Yavapai County Board of Supervisors Yavapai County Food Safety Industry Council (FSIC) District 1 representative.

The FSIC represents members of the food service industry, consumers, the University of Arizona, and the Yavapai County Environmental Health Unit. The FSIC has two representatives from the food establishment industry from each Yavapai County Board of Supervisor district and three at-large consumer representatives.

“The Food Safety Industry Council brings together a dynamic network of experts, industry professionals, regulators, and community members to proactively address food safety challenges across Yavapai County,” said Novak said. “I recognize that safeguarding food safety is essential to protecting public health and maintaining community trust. Through my role on the council, I contribute to reducing foodborne illnesses, strengthening consumer confidence, and promoting the overall well-being of Yavapai County residents.”

The purpose of the FSIC is to serve in an advisory capacity to the University of Arizona Cooperative Extension and the Yavapai County Community Health Services, Environmental Health Unit, to provide input and recommendations to address food safety in Yavapai County.

With her background as the chef-owner of a local restaurant, Novak blends culinary excellence with a strong commitment to food safety, ensuring the highest standards in all aspects of The Eatery's operations.

Novak is a passionate advocate for local producers and emphasizes the significance of sourcing products from nearby areas, a model she is currently implementing at The Eatery. Her research on sustainable kitchens and strategies for food waste prevention drives her efforts to establish a food system that is environmentally responsible and deeply connected to the community.
